A delicious low-carb casserole inspired by the classic Reuben sandwich, perfect for those following a keto diet.

  • 1 lb corned beef, chopped
  • 4 cups shredded green cabbage
  • 1 cup shredded Swiss cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup sauerkraut, well drained
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons sugar-free ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon dill pickle juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 2 tablespoons butter, melted
  • ½ cup crushed pork rinds
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish.
  2. Heat a large skillet over medium heat. Add the shredded cabbage and cook for 4–5 minutes, until slightly softened.
  3. In a bowl, whisk together the mayonnaise, sour cream, sugar-free ketchup, Dijon mustard, pickle juice, garlic powder, and black pepper.
  4. Layer half of the cabbage in the baking dish. Top with half of the corned beef, sauerkraut, and Swiss cheese.
  5. Spread half of the creamy dressing over the layer.
  6. Repeat with the remaining cabbage, corned beef, sauerkraut, dressing, Swiss cheese, and mozzarella.
  7. Combine the crushed pork rinds with melted butter and Parmesan cheese. Sprinkle evenly over the casserole.
  8. Bake uncovered for 25–30 minutes, until hot, bubbly, and golden on top.
  9. Let rest for 5–10 minutes before serving.

  • This dish can be made ahead of time and stored in the refrigerator before baking.
