1 pound thinly sliced ribeye steak
1 tablespoon olive oil
1 small yellow onion, thinly sliced
1 small green bell pepper, thinly sliced
½ small red bell pepper, thinly sliced
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
2 cups shredded mozzarella cheese
1 cup shredded provolone cheese
2 tablespoons grated Parmesan cheese
½ teaspoon Italian seasoning
2 tablespoons cream cheese (optional)
¼ teaspoon red pepper flakes (optional)
Chopped fresh parsley (for garnish)
Sliced jalapeños (optional)
Instructions
Prepare the Cheesesteak Filling: Heat the olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers. Cook for 5–7 minutes, stirring occasionally, until softened and lightly caramelized. Add the minced garlic and cook for 30 seconds. Push the vegetables to one side of the pan. Add the thinly sliced ribeye and cook for 3–5 minutes, breaking it into smaller pieces as it cooks. Season with Worcestershire sauce, salt, black pepper, and garlic powder. Mix the steak and vegetables together. Cook for another 1–2 minutes, then remove from the heat. Allow the filling to cool slightly.
Make the Cheese Wraps: Preheat the oven to 375°F. Line a large baking sheet with parchment paper. Combine the mozzarella, provolone, Parmesan, and Italian seasoning. Divide the cheese mixture into 4 portions and place them on the baking sheet, leaving plenty of space between each. Flatten each portion into a roughly 6-inch circle. Bake for 6–8 minutes, until the cheese is completely melted and the edges are beginning to turn golden brown. Important: Don’t let the cheese cool completely—it needs to remain flexible for rolling.
Add the Filling: If using cream cheese, spread a thin layer over each warm cheese wrap. Place approximately ¼ of the cheesesteak mixture across the center of each wrap. Add jalapeños or red pepper flakes if desired.
Roll: Carefully fold the sides of the cheese wrap inward. Roll tightly around the steak filling, similar to a burrito. Place the seam-side down. If necessary, return the rolls to the oven for 2–3 minutes to help them firm up.
Serve: Let the rolls rest for 2–3 minutes before slicing. Garnish with fresh parsley and serve warm.
