Keto Crispy Reuben Roll-Ups are a delicious low-carb twist on the classic Reuben sandwich, featuring layers of corned beef, Swiss cheese, and sauerkraut, all rolled up and baked to crispy perfection.

  • 8 ounces deli corned beef, sliced thin
  • 8 ounces Swiss cheese, sliced
  • 1 cup sauerkraut, drained and rinsed
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper. Set aside.
  3. Lay out the slices of corned beef on a clean surface, overlapping them slightly to create a solid layer.
  4. Spread a thin layer of the mayonnaise mixture over the corned beef.
  5. Place a slice of Swiss cheese on top of the corned beef.
  6. Add a spoonful of sauerkraut on top of the cheese, spreading it evenly.
  7. Carefully roll the corned beef tightly from one end to the other, securing the filling inside.
  8. Place the roll-up seam-side down on the prepared baking sheet. Repeat with the remaining ingredients.
  9. Brush the tops of the roll-ups with olive oil.
  10. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the roll-ups are crispy.
  11. Remove from the oven and let cool for a few minutes before slicing into bite-sized pieces.

Notes

  • For a spicier kick, add a few dashes of hot sauce to the mayonnaise mixture.
  • You can also substitute turkey or chicken for the corned beef for a lighter option.
