1 pound pork tenderloin, thinly sliced
2 tablespoons vegetable oil
4 cloves garlic, minced
1 bell pepper (red or green), sliced
1 cup broccoli florets
1 cup snap peas
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon cornstarch
1 tablespoon water
1 teaspoon sesame oil
Salt and pepper to taste
Cooked rice or noodles for serving
Instructions
In a small bowl, mix the soy sauce, oyster sauce, cornstarch, water, and sesame oil. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork tenderloin and season with salt and pepper. Stir-fry for about 3-4 minutes until the pork is browned and cooked through. Remove the pork from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
Add the sliced bell pepper, broccoli florets, and snap peas to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
Return the cooked pork to the skillet and pour the sauce mixture over the pork and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens slightly.
Serve hot over cooked rice or noodles.
Notes
For a spicier version, add red pepper flakes or sliced jalapeños to the stir-fry.
Substitute the pork with chicken, beef, or tofu for a different protein option.
