Ingredients

Scale
  • 2 ribeye or sirloin steaks, about 8 oz each
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 4 cloves garlic, smashed
  • 3 tbsp unsalted butter
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 1/2 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F.
  2. Place the halved baby potatoes in a large bowl and toss with olive oil, garlic powder, paprika, Italian seasoning, salt, and black pepper.
  3. Arrange the potatoes cut-side down on a baking sheet. Roast for 25–35 minutes, until golden brown and crispy.
  4. Sprinkle the roasted potatoes with Parmesan and parsley while they’re still hot.
  5. Pat the steaks dry with paper towels. Season both sides generously with salt, black pepper, and paprika.
  6. Heat olive oil in a heavy skillet over high heat until very hot.
  7. Add the steaks and sear for 3–4 minutes per side for medium-rare, depending on thickness. Adjust the cooking time to your preferred doneness.
  8. Reduce the heat to medium-low. Add the butter, smashed garlic, rosemary, and thyme.
  9. Once the butter melts, tilt the skillet slightly and repeatedly spoon the garlic butter over the steaks for 1–2 minutes.
  10. Transfer the steaks to a plate and let them rest for 5–10 minutes before slicing.
  11. Serve the juicy garlic-butter steak with the crispy roasted baby potatoes and extra garlic butter drizzled over the top.

Notes

  • For the juiciest steak, use a meat thermometer: about 130–135°F for medium-rare, 135–145°F for medium, and 145–155°F for medium-well.
