  • 4 bone-in or boneless pork chops (1-inch thick, about 2 pounds total)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • ½ cup low-sodium chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F. Lightly grease a 9×13-inch baking dish or oven-safe skillet.
  2. Pat the pork chops dry with paper towels. Rub both sides with olive oil. Mix together salt, black pepper, garlic powder, onion powder, smoked paprika, and Italian seasoning. Rub the seasoning mixture evenly over both sides of the pork chops.
  3. Heat a large oven-safe skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side, until golden brown. If using a regular skillet, transfer the pork chops to the prepared baking dish.
  4. Reduce the heat to medium. Melt the butter in the skillet. Add the garlic and cook for 30 seconds until fragrant. Stir in chicken broth, Worcestershire sauce, and Dijon mustard (if using). Simmer for 2 minutes. Pour the sauce over the pork chops.
  5. Bake uncovered for 12–18 minutes, depending on thickness, until the pork reaches an internal temperature of 145°F.
  6. Remove from the oven. Drizzle with the pan juices. Sprinkle with lemon juice and chopped parsley. Let the pork chops rest for 5 minutes before serving.
