3 to 4 pounds turkey butt (also known as turkey thighs)
2 tablespoons olive oil
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon black pepper
1 cup chicken broth
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Pat the turkey butt dry with paper towels. This helps to achieve a crispy skin.
In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, thyme, salt, and black pepper to create a seasoning paste.
Rub the seasoning paste all over the turkey butt, making sure to get it under the skin for maximum flavor.
Place the seasoned turkey butt in a roasting pan, skin side up. Pour the chicken broth into the bottom of the pan to keep the meat moist during cooking.
Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey butt with the pan juices every 30 minutes for extra juiciness.
Once cooked, remove the turkey butt from the oven and let it rest for 15 minutes before carving. This allows the juices to redistribute.
Garnish with fresh parsley before serving.

For added flavor, marinate the turkey butt in the seasoning paste overnight in the refrigerator.
