Jalapeño Popper Stuffed Onion Rings are a delicious twist on traditional onion rings, filled with a creamy and spicy jalapeño popper mixture, then breaded and fried to perfection.

  • 2 large sweet onions
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled cooked bacon
  • 1/4 cup diced jalapeños (fresh or pickled)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (panko or regular)
  • Oil for frying (vegetable or canola)
  • Salt and pepper to taste

Instructions

  1. Slice the tops off the onions and carefully peel them. Cut each onion into 1-inch thick rings and separate the rings, keeping the larger outer rings for stuffing. Reserve the smaller inner rings for another use or discard.
  2. In a mixing bowl, combine the cream cheese, cheddar cheese, crumbled bacon, diced jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
  3. Stuff each large onion ring with the jalapeño popper mixture, pressing down gently to ensure they are filled.
  4. Set up a breading station: Place the flour in one shallow dish, beat the eggs in a second dish, and put the breadcrumbs in a third dish.
  5. Dredge each stuffed onion ring in flour, shaking off the excess, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Repeat until all rings are breaded.
  6. In a large skillet, heat about 1 inch of oil over medium heat until it reaches 350°F. Carefully add the breaded onion rings in batches, frying until golden brown and crispy, about 3-4 minutes per side.
  7. Remove the onion rings from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. Serve hot with your favorite dipping sauce, such as ranch or spicy mayo.

Notes

  • For a lighter version, you can bake the stuffed onion rings at 400°F for about 20-25 minutes, flipping halfway through, until golden brown.
  • For an extra kick, add more jalapeños or a dash of hot sauce to the cheese mixture.
