  • 2 hoagie rolls
  • 1 cup romaine lettuce, chopped
  • 1 cup arugula
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pepperoncini, sliced
  • 1/4 cup black olives, sliced
  • 1/2 cup salami, sliced
  • 1/2 cup ham, sliced
  • 1/2 cup provolone cheese, sliced
  • 1/4 cup Italian dressing
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large bowl, combine the romaine lettuce, arugula, cherry tomatoes, cucumber, red onion, pepperoncini, and black olives. Toss gently to mix the vegetables evenly.
  2. In a small bowl, whisk together the Italian dressing, red wine vinegar, salt, and pepper. Pour the dressing over the salad mixture and toss until everything is well coated.
  3. Slice the hoagie rolls in half lengthwise, being careful not to cut all the way through.
  4. Layer the salami, ham, and provolone cheese evenly on the bottom half of each hoagie roll.
  5. Spoon the salad mixture generously over the meats and cheese.
  6. If desired, add fresh basil leaves on top for extra flavor.
  7. Close the sandwich by folding the top half of the hoagie roll over the filling.
  8. For best results, wrap the sandwiches in parchment paper and let them sit for about 10-15 minutes to allow the flavors to meld.
