Irish Pub Burgers are a delicious combination of juicy beef patties topped with caramelized onions in a rich Guinness sauce and creamy pub sauce, all served on toasted brioche buns.

Ingredients

Scale
  • 1 lb ground beef, preferably 80/20
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 4 slices sharp cheddar cheese
  • 4 brioche or hamburger buns
  • 1 tbsp butter, for toasting the buns
  • 2 tbsp butter (for Guinness-Onion Topping)
  • 1 large yellow onion, thinly sliced
  • ¼ cup Guinness or another stout beer
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • ½ tsp salt (for Guinness-Onion Topping)
  • ¼ tsp black pepper (for Guinness-Onion Topping)
  • ½ cup mayonnaise (for Creamy Pub Sauce)
  • 2 tbsp sour cream (for Creamy Pub Sauce)
  • 1 tbsp Dijon mustard (for Creamy Pub Sauce)
  • 1 tsp Worcestershire sauce (for Creamy Pub Sauce)
  • ½ tsp garlic powder (for Creamy Pub Sauce)
  • ¼ tsp black pepper (for Creamy Pub Sauce)
  • Optional Toppings: Lettuce, Tomato slices, Pickles, Crispy bacon

Instructions

  1. In a small bowl, combine the mayonnaise, sour cream, Dijon mustard, Worcestershire sauce, garlic powder, and black pepper. Mix well and refrigerate until ready to use.
  2. Melt the butter in a skillet over medium-low heat. Add the sliced onion and cook for 8–10 minutes, stirring occasionally, until soft and golden.
  3. Stir in the Guinness, brown sugar, Worcestershire sauce, salt, and black pepper. Cook for another 3–5 minutes, until the liquid reduces and the onions become glossy and caramelized. Remove from heat.
  4. Divide the ground beef into 4 portions and gently shape into patties slightly larger than the buns. Season both sides with salt, pepper, garlic powder, and onion powder.
  5. Heat a large skillet or grill over medium-high heat. Cook the burgers for about 4–5 minutes per side, or until they reach your preferred doneness and a food thermometer registers 160°F for ground beef.
  6. Place a slice of cheddar on each burger during the final minute of cooking. Cover the skillet briefly to help the cheese melt.
  7. Spread butter on the cut sides of the buns. Toast them in a skillet until lightly golden and crisp.
  8. Spread the creamy pub sauce on the bottom bun. Add lettuce if desired, followed by the cheesy beef patty and a generous spoonful of Guinness caramelized onions. Add pickles, tomato, or bacon if desired.
  9. Top with the remaining bun and serve immediately with fries, potato wedges, or a simple side salad.

Notes

  • For a spicier kick, consider adding jalapeños or hot sauce to the pub sauce.
  • Feel free to substitute the ground beef with ground turkey or a plant-based alternative for a lighter option.
  • These burgers can be grilled outdoors for a smoky flavor.
