  • 4 salmon fillets, about 6 oz each
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 cup pineapple chunks
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds, optional
  • ¼ cup honey
  • ¼ cup pineapple juice
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon red pepper flakes, optional
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet or baking dish with parchment paper.
  2. Pat the salmon fillets dry and season with olive oil, salt, pepper, and garlic powder.
  3. Arrange the salmon in the baking dish and scatter the pineapple chunks around the fillets.
  4. In a small saucepan, combine honey, pineapple juice, soy sauce, garlic, lime juice, ginger, and red pepper flakes. Bring to a gentle simmer.
  5. Mix the cornstarch and water in a small bowl. Stir the slurry into the glaze and cook for 1–2 minutes, until slightly thickened.
  6. Brush about half of the glaze generously over the salmon.
  7. Bake for 10–14 minutes, depending on the thickness of the salmon.
  8. Remove from the oven and brush with the remaining glaze.
  9. Broil for 1–2 minutes until the salmon is caramelized and the pineapple edges are lightly browned.
  10. Garnish with green onions and sesame seeds. Serve warm with rice or roasted vegetables.
