2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 (12-14 pound) whole turkey, thawed
1 cup honey
1/2 cup unsalted butter, melted
1/4 cup soy sauce
1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon ground cinnamon
Instructions
Preheat your oven to 325°F (165°C).
In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Rub this mixture all over the turkey, including under the skin where possible.
In another bowl, whisk together the honey, melted butter, soy sauce, apple cider vinegar, Dijon mustard, and cinnamon until well combined.
Place the turkey on a roasting rack in a large roasting pan. Pour half of the honey glaze over the turkey, making sure to coat it evenly.
Roast the turkey in the preheated oven for about 13-15 minutes per pound, basting with the remaining glaze every 30 minutes.
Check the internal temperature of the turkey in the thickest part of the thigh; it should reach 165°F (74°C). If the skin is browning too quickly, cover the turkey loosely with aluminum foil.
Once the turkey is cooked, remove it from the oven and let it rest for at least 20-30 minutes before carving.
Notes
For a spicier glaze, add 1-2 teaspoons of red pepper flakes to the honey mixture.
Consider stuffing the turkey with aromatics like onion, lemon, and fresh herbs for added flavor during roasting.
