A delicious and easy-to-make Honey Garlic Slow Cooker Pork Roast that is perfect for any occasion.

Ingredients

  • 3 lb boneless pork shoulder or pork loin
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • ½ cup honey
  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • 6 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • ½ tsp dried thyme
  • ½ tsp onion powder
  • 2 tbsp cornstarch
  • 3 tbsp cold water
  • 2 tbsp chopped fresh parsley

Instructions

  1. Pat the pork roast dry. Season all over with salt, pepper, paprika, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the pork for 2–3 minutes per side, until nicely browned.
  3. Place the pork in the slow cooker.
  4. Whisk together honey, soy sauce, chicken broth, garlic, apple cider vinegar, Dijon mustard, and thyme.
  5. Pour the honey garlic mixture over the pork.
  6. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the pork is tender and reaches at least 145°F (63°C) internally.
  7. Transfer the pork to a plate and let it rest for 10–15 minutes.
  8. Pour the cooking liquid into a saucepan. Bring to a gentle simmer.
  9. Mix cornstarch with cold water. Slowly whisk the slurry into the sauce and cook for 2–3 minutes, until thick and glossy.
  10. Slice or shred the pork and spoon the honey garlic sauce generously over the top.
  11. Garnish with fresh parsley and serve with mashed potatoes, rice, or roasted vegetables.
