- 2 lb pork loin
- 1/3 cup honey
- 1/4 cup soy sauce
- 5 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley, for garnish
- Preheat oven to 375°F.
- Pat the pork loin dry and season with salt, pepper, smoked paprika, and onion powder.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork for 2–3 minutes per side, until nicely browned.
- In a bowl, whisk together honey, soy sauce, garlic, apple cider vinegar, and Dijon mustard.
- Pour the honey-garlic mixture over the pork, turning it to coat well.
- Transfer the skillet to the oven and roast for 35–45 minutes, basting with the glaze halfway through.
- Cook until the thickest part reaches 145°F internally.
- Remove from the oven and let the pork rest for 10 minutes before slicing.
- Spoon the remaining glaze over the slices and garnish with parsley.
Notes
- If the glaze starts browning too quickly, loosely cover the pork with foil for the remainder of cooking.
