In a small bowl, whisk together honey, soy sauce, and minced garlic. Set aside.
Season both sides of the cod fillets with salt and pepper.
In a large skillet, heat olive oil and butter over medium heat until melted and hot.
Add the cod fillets to the skillet and cook for about 3-4 minutes on one side until golden brown.
Carefully flip the fillets and pour the honey garlic mixture over the top. Cook for an additional 3-4 minutes, basting the fish with the sauce as it cooks.
Once the fish is cooked through and flakes easily with a fork, remove from heat.
Garnish with chopped parsley if desired and serve immediately.
Notes
For a spicy kick, add a pinch of red pepper flakes to the honey garlic mixture.
Serve with steamed vegetables or over a bed of rice for a complete meal.
