Hobo Dinner Foil Packets are a simple and delicious meal option that can be cooked on the grill or in the oven, featuring ground beef and a variety of vegetables wrapped in foil.

Ingredients

Scale
  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 2 cups carrots, sliced
  • 1 medium onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Cut four large pieces of aluminum foil, about 12 inches long each.
  2. In a large bowl, combine the ground beef, diced potatoes, sliced carrots, chopped onion, and green bell pepper.
  3. Drizzle the olive oil over the mixture and sprinkle with garlic powder, onion powder, salt, black pepper, and paprika. Mix well to combine.
  4. Divide the mixture evenly among the four pieces of foil, placing it in the center of each piece.
  5. Fold the sides of the foil over the mixture and then fold the ends to create a sealed packet.
  6. Place the foil packets on the grill or in the oven and cook for 30-35 minutes, or until the vegetables are tender and the beef is cooked through.
  7. If using cheese, carefully open the packets and sprinkle shredded cheddar cheese on top. Reseal and cook for an additional 5 minutes until the cheese is melted.

Notes

  • For a vegetarian option, substitute the ground beef with black beans or lentils and add more vegetables like zucchini or corn.
  • Experiment with different seasonings or add your favorite herbs for extra flavor, such as Italian seasoning or fresh parsley.
