A delicious and hearty Ground Beef Cabbage Stir-Fry Casserole that combines lean ground beef, fresh vegetables, and a cheesy topping for a comforting meal.

  • 2 lbs (900 g) lean ground beef (85–90% lean)
  • 1 tbsp olive oil (if needed)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 small head green cabbage (about 2 lbs/900 g), chopped
  • 2 medium carrots, grated
  • 1 red bell pepper, diced
  • 1 cup sliced mushrooms
  • 1 cup frozen peas (optional)
  • 1 (14.5 oz/410 g) can diced tomatoes, drained
  • 2 tbsp tomato paste
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • ½ tsp dried thyme
  • ½ tsp crushed red pepper flakes (optional)
  • 2 cups (225 g) shredded sharp cheddar cheese
  • ½ cup (50 g) grated Parmesan cheese
  • Chopped fresh parsley (for garnish)
  • Sliced green onions (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat a large skillet over medium-high heat, add ground beef, and cook for 6–8 minutes, breaking it into crumbles. Drain excess fat if necessary. Stir in onion and cook for 3–4 minutes, then add garlic and cook for 30 seconds. Season with salt, pepper, smoked paprika, garlic powder, onion powder, and Italian seasoning.
  3. Stir in cabbage, carrots, bell pepper, and mushrooms. Cook for 6–8 minutes, stirring occasionally, until cabbage begins to soften. Stir in peas if using.
  4. Add diced tomatoes, tomato paste, beef broth, Worcestershire sauce, soy sauce, Dijon mustard, paprika, thyme, and red pepper flakes. Stir well and simmer for 5 minutes until slightly thickened.
  5. Transfer the beef and cabbage mixture to the prepared baking dish and sprinkle evenly with cheddar and Parmesan cheeses.
  6. Bake for 20–25 minutes, or until cheese is melted, bubbly, and lightly golden.
  7. Let the casserole rest for 5–10 minutes before serving. Garnish with chopped parsley and sliced green onions.
