  • 2 lb bone-in, skin-on chicken thighs
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 5 cloves garlic, minced
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 2 tbsp chopped fresh parsley
  • Lemon slices, for serving
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, finely minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a bowl, combine olive oil, lemon juice, lemon zest, garlic, honey, paprika, Italian seasoning, salt, pepper, and red pepper flakes.
  2. Add the chicken thighs and toss until thoroughly coated. Cover and marinate for at least 30 minutes, or refrigerate overnight.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Grill the chicken skin-side down for about 6–8 minutes, then flip and cook another 6–8 minutes. Continue turning as needed until deeply browned and the internal temperature reaches 165°F.
  5. While the chicken cooks, whisk together the mayonnaise, sour cream, garlic, lemon juice, parsley, red pepper flakes, salt, and pepper.
  6. Let the chicken rest for 5 minutes before serving.
  7. Garnish with fresh parsley and lemon slices. Serve with the creamy garlic dip.

Notes

  • For the dark, caramelized char, brush the chicken lightly with the marinade during the final few minutes of grilling, but only if the marinade has been boiled first.
