Gourmet Chicken Oscar is a delightful dish featuring seared chicken breasts topped with crab meat, mozzarella cheese, and asparagus, all baked to perfection.

  • 2 boneless, skinless chicken breasts (about 6 ounces each)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup asparagus, trimmed
  • 1/2 cup crab meat, lump or backfin
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  5. While the chicken is cooking, blanch the asparagus in boiling water for 2-3 minutes until tender but still crisp. Drain and set aside.
  6. Once the chicken is browned, remove the skillet from heat.
  7. In a small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, and paprika. Spread this mixture evenly over the top of each chicken breast.
  8. Top each chicken breast with an equal amount of crab meat, followed by the shredded mozzarella cheese.
  9. Arrange the blanched asparagus on top of the chicken.
  10. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  11. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • For a lighter version, substitute Greek yogurt for mayonnaise.
  • For added flavor, try adding a sprinkle of Old Bay seasoning to the crab meat before topping the chicken.
