2 tbsp (30 ml) olive oil
1 tbsp (15 ml) Worcestershire sauce
1 tbsp (15 ml) soy sauce
1 tbsp (15 ml) lemon juice
3 cloves garlic, minced
1 tbsp (15 ml) fresh rosemary, finely chopped
1 tsp Dijon mustard
½ tsp black pepper
½ tsp salt
1 tsp honey or brown sugar (optional)
Instructions
Combine the olive oil, Worcestershire sauce, soy sauce, lemon juice, garlic, rosemary, Dijon mustard, pepper, salt, and honey in a bowl.
Place 2 steaks (about 200–250 g each) in a zip-top bag or shallow dish.
Pour the marinade over the steaks and coat well.
Cover and refrigerate for 30 minutes to 2 hours. Avoid marinating too long because the lemon juice can affect the texture.
Remove the steaks from the refrigerator about 20–30 minutes before cooking and pat them dry.
Heat a heavy skillet or grill until very hot.
Cook the steaks to your preferred doneness, turning as needed. For a classic steakhouse crust, avoid moving them around too much.
Let the steaks rest for 5–10 minutes before slicing.
Notes
For a more Gordon Ramsay–style finish, sear the steak in a very hot pan with a little oil, then add butter, crushed garlic, and fresh rosemary during the final minute or two and baste the steak with the melted butter.
