1 sheet frozen puff pastry, thawed
8 oz mushrooms, finely chopped
1 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded Gruyère or sharp cheddar cheese
1 egg, beaten
2 tbsp grated Parmesan cheese
1 tbsp chopped fresh parsley, optional
Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Heat butter and olive oil in a skillet over medium-high heat. Add the mushrooms and cook for 5–7 minutes, until browned and most of the moisture has evaporated.
Add garlic, thyme, salt, and pepper. Cook for another 1 minute. Remove from heat and let cool slightly.
Cut the puff pastry into 12 equal squares.
Place a small spoonful of the mushroom mixture in the center of each square. Top with shredded cheese.
Fold the pastry corners toward the center or leave them open-faced. Gently press the edges to seal.
Arrange on the baking sheet and brush with beaten egg. Sprinkle with Parmesan.
Bake for 15–18 minutes, until puffed and deeply golden.
Garnish with parsley and serve warm.
Notes
Make sure the mushroom mixture isn’t watery before filling the pastry—this keeps the bites crisp and flaky.
