1½ lb boneless, skinless chicken thighs, cut into bite-sized pieces
½ cup cornstarch
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
2 large eggs, beaten
Vegetable oil, for frying
½ cup chicken broth
¼ cup soy sauce
¼ cup hoisin sauce
¼ cup rice vinegar
3 tbsp brown sugar
1 tbsp honey
1 tbsp cornstarch
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1–2 tsp crushed red pepper flakes
4 cups cooked and chilled white rice
2 tbsp vegetable oil
2 large eggs, beaten
½ cup diced onion
½ cup frozen peas and carrots
2 tbsp soy sauce
1 tsp sesame oil
2 green onions, sliced
¼ tsp black pepper
Instructions
Prepare the chicken: Season the chicken pieces with salt, black pepper, and garlic powder. Dip them in beaten eggs, then toss thoroughly in cornstarch.
Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Fry the chicken in batches for 4–6 minutes, turning occasionally, until golden and cooked through. Drain on paper towels.
Make the sauce: Whisk together chicken broth, soy sauce, hoisin sauce, rice vinegar, brown sugar, honey, and cornstarch.
Heat a little oil in a skillet. Sauté the garlic and ginger for about 30 seconds. Add the sauce mixture and red pepper flakes. Cook for 2–3 minutes, stirring constantly, until thickened.
Add the crispy chicken and toss until completely coated. Cook for another 1–2 minutes.
Make the fried rice: Heat vegetable oil in a large skillet or wok. Add the beaten eggs and scramble until just cooked.
Add onion, peas, and carrots. Stir-fry for 2–3 minutes.
Add the chilled rice, breaking up any clumps. Stir-fry for 4–5 minutes.
Add soy sauce, sesame oil, and black pepper. Toss well and cook for another 1–2 minutes.
Garnish with green onions and serve the General Tso chicken over or alongside the fried rice.
Notes
Ensure the chicken is cooked through and golden brown for the best texture.
Adjust the amount of red pepper flakes according to your spice preference.
Using chilled rice helps prevent it from becoming mushy when stir-frying.
