Garlic Steak and Potato Foil Packs are a delicious and easy meal option, perfect for grilling or baking. This recipe combines tender steak, flavorful potatoes, and fresh vegetables, all cooked in a convenient foil packet.

  • 2 large russet potatoes, diced into 1-inch cubes
  • 1 lb sirloin steak, cut into 1-inch pieces
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup green bell pepper, diced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat. If using an oven, preheat to 400°F.
  2. In a large bowl, combine the diced potatoes, olive oil, minced garlic, rosemary, thyme, salt, and pepper. Toss until the potatoes are well coated.
  3. Tear off four large pieces of aluminum foil (about 12×12 inches each).
  4. Divide the potato mixture evenly among the four pieces of foil, placing it in the center of each.
  5. Top each potato mixture with the steak pieces, cherry tomatoes, and green bell pepper. Drizzle a little more olive oil over the top if desired, and season with additional salt and pepper.
  6. Fold the sides of the foil over the mixture to create a sealed packet, making sure it is tightly closed.
  7. Place the foil packs on the grill or in the oven. Cook for about 25-30 minutes, or until the potatoes are tender and the steak is cooked to your desired doneness.
  8. Carefully open the foil packs (watch out for steam) and garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add 1 teaspoon of red pepper flakes to the potato mixture.
  • You can substitute the sirloin steak with chicken breast or shrimp for a different protein option.
