8 ounces spaghetti
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup spinach, chopped
1/4 cup fresh parsley, chopped (for garnish)
Instructions
Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt, pepper, and red pepper flakes. Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown.
Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
Add the cooked spaghetti and chopped spinach to the skillet, tossing everything together. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.
Remove from heat and garnish with fresh parsley before serving.
Notes
For a lighter version, substitute half-and-half for the heavy cream.
