A delicious and easy-to-make Garlic Parmesan Chicken and Potatoes recipe that combines tender chicken with flavorful roasted potatoes, all topped with a cheesy garlic Parmesan crust.

700 g boneless, skinless chicken thighs or breasts, cut into bite-size pieces
700 g baby potatoes, halved or quartered
3 tbsp olive oil
50 g unsalted butter, melted
6 cloves garlic, minced
60 g grated Parmesan cheese
1 tsp Italian seasoning
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
¾ tsp salt
½ tsp black pepper
½ tsp red pepper flakes, optional
2 tbsp fresh parsley, chopped
Instructions
Preheat oven to 200°C. Lightly grease a large baking dish or sheet pan.
Place the potatoes in a large bowl. Add 1½ tbsp olive oil, ½ of the minced garlic, paprika, Italian seasoning, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
Spread the potatoes in a single layer and roast for 20 minutes.
Toss the chicken pieces with the remaining olive oil, melted butter, remaining garlic, and a little salt and pepper.
Remove the pan from the oven and add the chicken among the potatoes. Toss everything gently.
Sprinkle the Parmesan evenly over the chicken and potatoes. Return to the oven and bake for another 18–25 minutes, until the chicken is cooked through and the potatoes are tender and golden.
For extra browning, switch the oven to grill/broil for the final 2–3 minutes, watching carefully so the Parmesan doesn’t burn.
Sprinkle with fresh parsley and extra Parmesan. Serve hot.
Notes
For the crispiest potatoes, don’t overcrowd the pan. Keep them in a single layer with some space between the pieces.
Optional: Add 150 g broccoli florets during the final 15 minutes.
Optional: Add sliced mushrooms or bell peppers.
Optional: Sprinkle with mozzarella during the last 5 minutes for an extra-cheesy version.
Optional: Add a squeeze of fresh lemon juice before serving to brighten the garlic-Parmesan flavor.
