2 beef steaks, about 200–250 g each
1 tbsp olive oil
2 tbsp unsalted butter
3 cloves garlic, minced
1 tsp fresh thyme leaves
½ tsp salt
½ tsp black pepper
250 g mushrooms, sliced
1 tbsp butter
½ small onion, finely diced
2 cloves garlic, minced
180 ml beef broth
120 ml heavy cream
1 tbsp Worcestershire sauce
½ tsp Dijon mustard
½ tsp black pepper
Salt, to taste
1 tbsp chopped fresh parsley
500 g potatoes
1–2 tbsp olive oil
½ tsp garlic powder
½ tsp paprika
Salt, to taste
Instructions
Prepare the fries: Cut potatoes into thick strips and soak in cold water for 20–30 minutes. Drain and dry very well. Toss with olive oil, garlic powder, paprika, and salt.
Bake at 220°C for about 30–40 minutes, turning halfway, until golden and crisp.
Season the steaks: Pat steaks dry and season both sides with salt and black pepper.
Heat olive oil in a heavy skillet over medium-high heat. Add the steaks and sear for about 3–4 minutes per side for medium-rare, adjusting the time according to thickness and desired doneness.
During the last minute, add butter, garlic, and thyme. Spoon the melted garlic butter over the steaks repeatedly.
Transfer steaks to a plate and let them rest for 5–10 minutes.
Make the mushroom sauce: Using the same skillet, add butter and sliced mushrooms. Cook for 5–7 minutes, until browned and tender.
Add onion and garlic and cook for another 2 minutes.
Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Scrape up the browned bits from the bottom of the pan and simmer for 2–3 minutes.
Lower the heat and stir in the heavy cream. Simmer for 3–5 minutes, until the sauce thickens. Season with salt and pepper.
Stir in fresh parsley.
Serve: Place the steak on a plate, spoon the creamy mushroom sauce generously over the top, and serve with the crispy fries.
Notes
Adjust cooking time for steaks based on thickness and desired doneness.
For extra flavor, consider marinating the steaks beforehand.
