2 tablespoons vegetable oil
1 pound boneless, skinless chicken breasts, sliced into thin strips
8 ounces mushrooms, sliced (button or cremini)
1 bell pepper, sliced (any color)
1 cup broccoli florets
4 cloves garlic, minced
1 tablespoon fresh ginger, minced
3 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
Salt and pepper to taste
Cooked rice or noodles for serving
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced chicken to the skillet and season with salt and pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms, bell pepper, and broccoli. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.
Add the minced garlic and ginger to the skillet and cook for an additional 1-2 minutes until fragrant.
Return the cooked chicken to the skillet. Add the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine and heat through for another 2-3 minutes.
Taste and adjust seasoning with more salt, pepper, or soy sauce as needed.
Serve hot over cooked rice or noodles.
Notes
For added heat, include a teaspoon of red pepper flakes or a splash of sriracha sauce.
Substitute the chicken with tofu or shrimp for a different protein option.
