  • 3–4 lb (1.4–1.8 kg) beef roast
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme
  • 1½ tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 cups beef broth
  • 2 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the beef dry. Rub with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Sear the beef in a hot oven-safe pan for about 2–3 minutes per side until deeply browned.
  4. Roast for 15 minutes at 425°F, then reduce the temperature to 325°F (165°C) and continue cooking until the center reaches your preferred doneness—about 130–135°F (54–57°C) for medium-rare.
  5. Remove from the oven, loosely cover with foil, and rest for 15–20 minutes before slicing.
  6. For the gravy, melt butter in the roasting pan. Stir in flour and cook for about 1 minute.
  7. Slowly whisk in beef broth and Worcestershire sauce. Simmer until smooth, glossy, and slightly thickened. Season to taste.
  8. Slice the roast into thick pieces, arrange on a platter, and generously spoon the hot gravy over the top.
  9. Garnish with fresh rosemary or thyme and serve with crispy roasted potatoes.
