2½ lbs pork loin
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
¼ cup honey
2 tablespoons brown sugar
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1 tablespoon butter
½ cup chicken broth
1 tablespoon butter
1 tablespoon chopped fresh parsley
Instructions
Preheat the oven: Set oven to 375°F.
Season the pork: Pat the pork loin dry. Rub with olive oil, garlic, rosemary, thyme, paprika, salt, and black pepper.
Sear: Heat a large oven-safe skillet over medium-high heat. Sear the pork for 2–3 minutes per side, until deeply browned.
Make the glaze: Combine honey, brown sugar, soy sauce, Dijon mustard, vinegar, and garlic in a small saucepan. Simmer for 2–3 minutes, then stir in butter.
Glaze and roast: Brush the pork generously with the glaze. Transfer the skillet to the oven and roast for 40–55 minutes, brushing with more glaze halfway through.
Check doneness: Cook until the thickest part reaches 145°F. Let the pork rest for 10–15 minutes before slicing.
Make the sauce: Place the skillet over medium heat. Add chicken broth and scrape up the browned bits. Simmer for 3–5 minutes, then stir in butter and parsley.
Slice and serve: Slice the pork into thick pieces and spoon the glossy pan sauce over the top. Garnish with fresh rosemary and thyme.
