Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 oz cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tbsp chopped fresh parsley
  • 1 tsp dried Italian herbs
  • ¼ tsp black pepper
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ tsp garlic powder
  • ½ tsp paprika

Instructions

  1. In a bowl, combine cream cheese, mozzarella, Parmesan, garlic, parsley, Italian herbs, and black pepper.
  2. Slice each chicken breast horizontally to create thin pieces. Lightly pound them to an even thickness.
  3. Season both sides with salt, pepper, Italian seasoning, and paprika.
  4. Place about 1 tbsp of the cheese mixture in the center of each chicken piece. Roll tightly and secure with toothpicks.
  5. Set up three bowls: flour in the first, beaten eggs in the second, and breadcrumbs mixed with garlic powder and paprika in the third.
  6. Coat each chicken medallion in flour, dip into egg, then coat thoroughly with breadcrumbs.
  7. Heat olive oil and butter in a skillet over medium heat. Brown the chicken for 3–4 minutes per side.
  8. Transfer to a baking dish and bake at 375°F (190°C) for 15–20 minutes, or until the chicken reaches 165°F (74°C) internally.
  9. Let rest for 5 minutes, then carefully remove the toothpicks.
  10. Garnish with fresh parsley and serve hot.

Notes

  • Ensure the chicken is pounded evenly for consistent cooking.
  • Feel free to add more herbs to the cheese filling for extra flavor.
  • Serve with a side salad or vegetables for a complete meal.
