Deliciously baked chicken drumsticks coated in a flavorful garlic herb butter mixture.

  • 8 chicken drumsticks
  • 60 g unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp lemon juice
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 200°C.
  2. Pat the chicken drumsticks thoroughly dry with paper towels and place them in a large bowl.
  3. In a small bowl, combine melted butter, olive oil, minced garlic, Italian seasoning, oregano, paprika, onion powder, salt, black pepper, parsley, rosemary, thyme, and lemon juice. Mix well.
  4. Pour the garlic herb butter mixture over the chicken and rub it thoroughly over each drumstick. For more flavor, cover and refrigerate for 30 minutes to 2 hours.
  5. Arrange the drumsticks in a single layer in a lightly greased baking dish or on a lined baking sheet. Bake uncovered for 40–50 minutes, turning halfway through and basting with pan juices.
  6. For crispier skin, switch the oven to broil/grill during the final 2–3 minutes, watching carefully to prevent burning.
  7. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley and serve with lemon wedges.

Notes

  • These drumsticks pair well with garlic mashed potatoes, roasted vegetables, rice, or a fresh green salad.
  • Save the buttery juices from the baking dish to spoon over the chicken and rice before serving.
