1½ lb sirloin steak, cut into bite-size pieces
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
4 tablespoons unsalted butter
5 cloves garlic, minced
1 teaspoon Italian seasoning
1 tablespoon chopped fresh parsley
12 oz penne or fettuccine
2 tablespoons unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ teaspoon Italian seasoning
¼ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil, optional
½ cup reserved pasta water, as needed
Instructions
Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain.
Season the steak: Pat the steak pieces dry. Season with salt, pepper, and smoked paprika.
Sear the steak: Heat olive oil in a large skillet over medium-high heat. Add the steak in a single layer and sear for 2–3 minutes per side, or until browned and cooked to your preferred doneness. Work in batches if needed.
Make the garlic butter: Reduce heat to medium. Add butter and minced garlic to the skillet. Stir for 30–60 seconds, then add Italian seasoning and parsley. Toss the steak in the garlic butter until well coated. Remove from the skillet and set aside.
Make the cheesy sauce: In the same skillet, melt 2 tablespoons butter over medium heat. Add garlic and cook for 30 seconds. Pour in heavy cream and simmer gently for 2–3 minutes.
Add cheese: Reduce heat to low. Stir in mozzarella and Parmesan until melted and smooth. Season with Italian seasoning, salt, and pepper.
Combine with pasta: Add the cooked pasta and toss until coated. Add reserved pasta water, a tablespoon at a time, if the sauce is too thick.
Serve: Spoon the cheesy herb pasta onto plates and top with the garlic butter steak. Garnish with fresh parsley and basil.
Notes
For a spicier kick, add red pepper flakes to the garlic butter.
Feel free to substitute the pasta type based on your preference.
