Delicious garlic butter steak bites served with cheesy loaded fries, perfect for a hearty meal.

Ingredients

  • 600 g sirloin steak, cut into 2–3 cm cubes
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, finely minced
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp dried parsley
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Worcestershire sauce, optional
  • 750 g frozen French fries
  • 150 g shredded cheddar cheese
  • 100 g shredded mozzarella cheese
  • 100 g cooked bacon, chopped
  • 2 spring onions, sliced
  • 2 tbsp jalapeños, sliced, optional
  • 120 g sour cream
  • 60 g mayonnaise
  • 1 tbsp lime or lemon juice
  • 1 small garlic clove, minced
  • 1 tbsp chopped parsley
  • Salt and black pepper, to taste

Instructions

  1. Cook the fries: Prepare the French fries according to the package instructions until golden and crispy. For extra crispiness, bake or air-fry them rather than deep-frying.
  2. Make the sauce: Mix sour cream, mayonnaise, lime or lemon juice, garlic, and parsley in a small bowl. Season with a little salt and pepper. Refrigerate until ready to serve.
  3. Season the steak: Pat the steak cubes dry. Toss them with olive oil, paprika, onion powder, salt, and black pepper.
  4. Sear the steak: Heat a large heavy skillet over high heat. Add the steak in a single layer, working in batches if necessary. Sear for about 2–3 minutes per side, until browned and cooked to your preferred doneness.
  5. Add garlic butter: Reduce the heat to medium-low. Add the butter and minced garlic. Toss the steak bites continuously for 1–2 minutes, allowing the garlic and butter to coat the meat. Stir in Worcestershire sauce and dried parsley, if using.
  6. Make the loaded fries: Place the cooked fries on a baking tray or oven-safe dish. Sprinkle evenly with cheddar and mozzarella. Add the chopped bacon.
  7. Melt the cheese: Bake at 200°C for about 5–8 minutes, until the cheese is completely melted and bubbling.
  8. Assemble: Top the cheesy fries with the hot garlic butter steak bites. Sprinkle with spring onions and jalapeños.
  9. Finish: Drizzle with the creamy sauce or serve it on the side. Garnish with fresh parsley.

Notes

  • Use sirloin, ribeye, or strip steak for the best texture.
  • Pat the steak very dry before cooking so it sears instead of steams.
  • Don’t overcrowd the pan.
  • Add the garlic after searing so it doesn’t burn.
  • For extra-crispy fries, cook them until golden before adding the cheese.
