2 cups cooked chicken, shredded
1/4 cup unsalted butter
4 cloves garlic, minced
1/4 cup honey
1/2 cup BBQ sauce
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small flour or corn tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro (optional)
Lime wedges for serving
Instructions
In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Stir in the honey, BBQ sauce, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes until the mixture is heated through and well combined.
Add the shredded chicken to the saucepan, stirring to coat it evenly with the garlic butter honey BBQ sauce. Cook for an additional 3-5 minutes until the chicken is heated through.
While the chicken is warming, heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side until soft and pliable.
To assemble the tacos, place a generous portion of the BBQ chicken mixture on each tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheddar cheese.
Garnish with chopped cilantro if desired and serve with lime wedges on the side.
Notes
For a spicier kick, add sliced jalapeños or a dash of hot sauce to the chicken mixture.
For a lighter version, substitute the butter with olive oil and use grilled chicken instead of shredded.
