Ingredients
Scale
1 lb ground beef
2 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1/3 cup BBQ sauce
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
1 teaspoon apple cider vinegar
8 small flour or corn tortillas
1 cup shredded cheddar cheese
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup diced red onion
1/4 cup sour cream
2 tablespoons chopped fresh cilantro
Lime wedges, for serving
Instructions
Prepare the sauce. In a small bowl, whisk together the BBQ sauce, honey, soy sauce, Worcestershire sauce, and apple cider vinegar until smooth. Set aside.
Brown the beef. Heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a spatula until browned and cooked through. Drain excess grease if needed.
Add the garlic butter. Reduce the heat to medium. Add the butter and minced garlic to the skillet. Stir for about 30–60 seconds until fragrant.
Season the beef. Add the smoked paprika, onion powder, chili powder, black pepper, and salt. Stir well to coat the beef evenly.
Add the honey BBQ sauce. Pour the prepared sauce over the beef. Stir and simmer for 3–5 minutes until the sauce thickens slightly and coats the meat.
Warm the tortillas. Heat the tortillas in a dry skillet for about 20–30 seconds per side until warm and flexible.
Assemble the tacos. Divide the beef mixture among the tortillas. Top with shredded cheddar cheese, lettuce, tomatoes, and red onion.
Add the finishing touches. Drizzle with sour cream, sprinkle with fresh cilantro, and serve with lime wedges.
Notes
For extra flavor: Let the beef caramelize slightly in the skillet before adding the sauce.
For a spicy kick: Add diced jalapeños or a pinch of cayenne pepper.
For crispy tacos: Fill the tortillas with beef and cheese, then toast them in a lightly buttered skillet until golden.
For meal prep: Store the beef separately from the tortillas and fresh toppings in airtight containers in the refrigerator for up to 3–4 days.
