1 pound cod fillets, cut into bite-sized pieces
1/4 cup unsalted butter
4 cloves garlic, minced
1 teaspoon paprika
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (plus more for garnish)
1 tablespoon fresh dill, chopped
1/2 cup sour cream
1 tablespoon lemon juice
1 teaspoon lemon zest
1/2 teaspoon garlic powder
Instructions
Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Sprinkle the cod pieces with paprika, salt, and pepper. Carefully add the cod to the skillet and cook for about 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork.
While the cod is cooking, prepare the creamy lemon herb sauce. In a small bowl, combine the sour cream, lemon juice, lemon zest, garlic powder, parsley, and dill. Mix until well combined.
Once the cod is cooked, remove it from the skillet and place it on a serving platter. Drizzle the garlic butter from the skillet over the cod bites.
Serve the cod bites warm with the creamy lemon herb sauce on the side for dipping. Garnish with additional parsley if desired.
Notes
For a spicier kick, add a pinch of red pepper flakes to the garlic butter while cooking the cod.
