1 lb ground beef
1 tablespoon butter
1 small onion, diced
4 cloves garlic, minced
1 cup long-grain white rice
2 cups beef broth
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
1 cup heavy cream
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
2 tablespoons cream cheese
½ teaspoon garlic powder
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
Extra Parmesan, if desired
Instructions
Heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart as it browns. Drain excess grease if needed.
Add butter and diced onion. Cook for 3–4 minutes, until softened. Stir in garlic and cook for 30 seconds.
Stir in the uncooked rice, beef broth, Italian seasoning, paprika, salt, and black pepper. Bring to a gentle boil.
Reduce heat to low, cover, and cook for 18–20 minutes, or until the rice is tender and the liquid has been absorbed. Remove from heat.
In a separate saucepan over medium-low heat, warm the heavy cream. Add cream cheese and stir until smooth. Gradually stir in cheddar and Parmesan until melted and creamy. Add garlic powder and black pepper.
Pour the cheddar Parmesan sauce over the beef and rice. Gently stir until everything is well coated.
Sprinkle with fresh parsley and extra Parmesan.
Serve hot straight from the skillet.
Notes
For a spicier version, add red pepper flakes to the beef mixture.
