Ingredients

2 cups cooked white rice
2 tablespoons vegetable oil
4 cloves garlic, minced
1 pound bok choy, chopped
2 tablespoons soy sauce
1 teaspoon sesame oil
Salt and pepper to taste
2 green onions, sliced (for garnish)
Instructions
In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Add the chopped bok choy to the skillet and stir-fry for 3-4 minutes until it begins to wilt.
Stir in the cooked rice, soy sauce, and sesame oil. Mix well to combine all the ingredients and cook for an additional 2-3 minutes until heated through.
Season with salt and pepper to taste.
Remove from heat and garnish with sliced green onions before serving.
Notes
For added protein, consider adding cooked chicken, shrimp, or tofu to the stir-fry.
You can substitute bok choy with other leafy greens like spinach or kale for a different flavor and texture.
