Delicious fudgy brownies swirled with fresh raspberries and raspberry jam, perfect for satisfying your sweet tooth.

  • 1 cup unsalted butter (2 sticks)
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup fresh raspberries (or frozen, thawed)
  • 1/4 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium saucepan, melt the butter over low heat.
  3. Once melted, remove from heat and stir in the sugar until well combined.
  4. Allow to cool slightly, then whisk in the eggs one at a time, followed by the vanilla extract.
  5. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  7. Pour half of the brownie batter into the prepared baking pan and spread evenly.
  8. In a small bowl, combine the raspberries and raspberry jam, gently mashing the raspberries with a fork.
  9. Spoon the raspberry mixture over the brownie batter in the pan, then dollop the remaining brownie batter on top.
  10. Use a knife or skewer to swirl the raspberry mixture into the brownie batter.
  11. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  12. Allow the brownies to cool in the pan for at least 15 minutes before cutting into squares.

Notes

  • For a richer flavor, try adding 1/2 cup of chocolate chips to the batter.
  • For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free flour blend.
