½ cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon fresh lemon juice
1 cup fresh strawberries, finely diced
1 tablespoon strawberry jam
12 slices thick white bread or brioche
2 large eggs
½ cup whole milk
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
1 tablespoon granulated sugar
1 cup panko breadcrumbs
Vegetable oil, for frying

Instructions
Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese and powdered sugar until smooth. Add the vanilla and lemon juice. Mix until creamy. Fold in the diced strawberries and strawberry jam. Refrigerate the filling for 10–15 minutes to make it easier to spread.
Assemble the Sandwiches: Spread approximately 2–3 tablespoons of the cheesecake mixture onto 6 slices of bread. Top with the remaining slices of bread and gently press the edges together. For a cleaner seal, lightly press around the edges with your fingers.
Prepare the Coating: In a shallow bowl, whisk together eggs, milk, vanilla, cinnamon, and granulated sugar. Place the panko breadcrumbs in a separate shallow dish. Dip each sandwich into the egg mixture, coating both sides. Immediately coat with panko breadcrumbs, pressing gently so the crumbs adhere.
Fry: Heat about 1 inch of vegetable oil in a large skillet over medium heat to approximately 350°F. Carefully place the sandwiches into the hot oil. Fry for about 2–3 minutes per side, until golden brown and crisp. Work in batches so you don’t overcrowd the pan. Transfer to a wire rack lined with paper towels to drain.
Serve: Let the sandwiches cool for 3–5 minutes before cutting. Dust generously with powdered sugar. Serve with fresh strawberries, strawberry sauce, whipped cream, extra cheesecake filling, and a drizzle of chocolate or white chocolate.
Notes
For a sweeter sauce, adjust the sugar in the easy strawberry sauce to taste.
Ensure the oil is hot enough before frying to achieve a crispy texture.
These sandwiches can be made ahead of time and reheated in an oven for a few minutes.
