Fried Quinoa with Vegetables is a delicious and nutritious dish that combines fluffy quinoa with a variety of colorful vegetables, making it a perfect meal for any time of the day.

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
  2. In a large skillet or wok, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent.
  3. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Stir in the bell peppers and carrots, cooking for about 5 minutes until they begin to soften.
  5. Add the cooked quinoa to the skillet along with the frozen peas, soy sauce, and sesame oil. Mix well and cook for another 3-5 minutes, stirring frequently, until everything is heated through.
  6. Season with salt and pepper to taste. Remove from heat and garnish with sliced green onions before serving.
