  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 large onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and sauté for about 10 minutes, stirring occasionally, until they are soft and caramelized.
  2. Add the sliced mushrooms to the skillet and cook for an additional 5 minutes until they are tender. Stir in the garlic powder, thyme, salt, and pepper. Remove the onion and mushroom mixture from the skillet and set aside.
  3. In the same skillet, add the chicken breasts and sear for about 5 minutes on each side until golden brown.
  4. Pour the beef broth into the skillet, then return the onion and mushroom mixture to the pan, spreading it evenly over the chicken.
  5. Cover the skillet and reduce the heat to low. Simmer for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  6. Preheat the broiler. Once the chicken is cooked, sprinkle the shredded Gruyère cheese over the top and place the skillet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven, garnish with fresh parsley, and serve hot.

Notes

  • For a creamier sauce, stir in ½ cup of heavy cream after adding the beef broth.
  • Substitute the Gruyère cheese with Swiss or mozzarella for a different flavor profile.
