1 pound beef stew meat, cut into 1-inch pieces
2 tablespoons olive oil
2 medium onions, thinly sliced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 cup beef broth
1 cup water
1 tablespoon Worcestershire sauce
8 ounces egg noodles
1 cup shredded Swiss cheese
Instructions
In a large skillet, heat the olive oil over medium heat.
Add the sliced onions and cook, stirring occasionally, for about 10-15 minutes until they are caramelized and golden brown.
Add the minced garlic, thyme, salt, and pepper, and cook for an additional 1-2 minutes until fragrant.
Increase the heat to medium-high and add the beef stew meat to the skillet. Brown the beef on all sides, about 5-7 minutes.
Pour in the beef broth, water, and Worcestershire sauce. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 hour or until the beef is tender.
While the beef is cooking, bring a separate pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.
Once the beef is tender, stir in the cooked egg noodles and mix well.
Sprinkle the shredded Swiss cheese on top, cover, and let sit for 5 minutes until the cheese is melted.
Serve hot.
Notes
For a richer flavor, consider adding a splash of red wine to the beef broth while it simmers.
To make it a one-pot meal, you can add some frozen peas or green beans during the last few minutes of cooking for added color and nutrition.
