Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 pre-made 9-inch pie crust
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the shrimp, red bell pepper, corn, Old Bay seasoning, salt, and black pepper to the skillet. Cook for about 5-7 minutes, or until the shrimp turn pink and are cooked through. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the mayonnaise, sour cream, lemon juice, and Worcestershire sauce. Stir in the cooled shrimp mixture until well combined.
  5. Pour the shrimp mixture into the pre-made pie crust, spreading it evenly. Top with shredded cheddar cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Remove from the oven and let cool for 10 minutes before slicing. Garnish with sliced green onions before serving.

Notes

  • For a spicier kick, add diced jalapeños to the shrimp mixture.
  • You can also substitute crab or lobster for the shrimp for a different seafood flavor.
  • For a lighter version, use Greek yogurt instead of sour cream.
