1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup corn kernels (fresh or frozen)
1 teaspoon Old Bay seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 pre-made 9-inch pie crust
1 cup shredded cheddar cheese
2 green onions, sliced (for garnish)
Instructions
Preheat the oven to 350°F.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
Add the shrimp, red bell pepper, corn, Old Bay seasoning, salt, and black pepper to the skillet. Cook for about 5-7 minutes, or until the shrimp turn pink and are cooked through. Remove from heat and let cool slightly.
In a mixing bowl, combine the mayonnaise, sour cream, lemon juice, and Worcestershire sauce. Stir in the cooled shrimp mixture until well combined.
Pour the shrimp mixture into the pre-made pie crust, spreading it evenly. Top with shredded cheddar cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Remove from the oven and let cool for 10 minutes before slicing. Garnish with sliced green onions before serving.
Notes
For a spicier kick, add diced jalapeños to the shrimp mixture.
You can also substitute crab or lobster for the shrimp for a different seafood flavor.
For a lighter version, use Greek yogurt instead of sour cream.
