A delicious and smoky meatloaf skillet topped with three types of cheese and a spicy firecracker sauce.

1 ½ lbs ground beef
6 slices bacon, cooked and chopped
1 large egg
½ cup breadcrumbs
¼ cup milk
½ cup finely diced onion
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
½ cup shredded Monterey Jack cheese
½ cup ketchup
¼ cup hot sauce
2 tbsp brown sugar
1 tbsp honey
1 tbsp Worcestershire sauce
½ tsp smoked paprika
¼ tsp cayenne pepper, or more to taste
Instructions
Preheat oven to 375°F.
In a large bowl, combine the ground beef, chopped bacon, egg, breadcrumbs, milk, onion, garlic, Worcestershire sauce, smoked paprika, salt, black pepper, and garlic powder. Mix gently until just combined.
Heat an oven-safe skillet over medium heat. Shape the meat mixture into a large, thick meatloaf and place it in the skillet.
Cook for about 5–7 minutes on the stovetop to lightly brown the bottom.
Mix the ketchup, hot sauce, brown sugar, honey, Worcestershire sauce, smoked paprika, and cayenne pepper in a small bowl.
Spread about half of the firecracker sauce over the meatloaf.
Transfer the skillet to the oven and bake for 35–45 minutes, or until the center reaches 160°F.
Remove from the oven and spread the remaining sauce over the top.
Sprinkle the cheddar, mozzarella, and Monterey Jack evenly over the meatloaf.
Return to the oven for 5–8 minutes, until the cheese is completely melted and bubbly.
Rest for 5–10 minutes before slicing and serving.
Notes
For extra smoky flavor, add ½ tsp liquid smoke to the meatloaf mixture or firecracker sauce.
