4 large sweet onions
1 pound ground beef
1 cup shredded sharp cheddar cheese
6 slices cooked bacon, crumbled
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
1/2 cup breadcrumbs
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Cut the tops off the onions and carefully scoop out the insides, leaving about a 1/2-inch thick shell. Reserve the onion insides for another use.
In a large mixing bowl, combine the ground beef, cheddar cheese, crumbled bacon, mayonnaise, ketchup, mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
Stuff each onion shell generously with the beef mixture, packing it down slightly.
In a small bowl, mix the breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumb mixture on top of each stuffed onion.
Place the stuffed onions in a baking dish and cover with aluminum foil. Bake for 30 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the onions are tender and the tops are golden brown.
Remove from the oven and let cool for a few minutes before serving. Garnish with chopped parsley.
Notes
For extra heat, add diced jalapeños or a splash of hot sauce to the beef mixture.
Substitute ground turkey or chicken for a lighter version of the filling.
