Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • ¼ cup ketchup
  • 3 tbsp brown sugar
  • 2 tbsp honey
  • 2 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • ½ tsp black pepper
  • 4 burger buns or brioche buns
  • 8 slices grilled pineapple
  • 4 slices red onion
  • 4 lettuce leaves
  • ½ cup shredded cabbage
  • ¼ cup mayonnaise
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 2 green onions, sliced
  • Sesame seeds, optional

Instructions

  1. Make the marinade: Whisk together pineapple juice, soy sauce, ketchup, brown sugar, honey, ginger, garlic, rice vinegar, sesame oil, and black pepper.
  2. Marinate the chicken: Place chicken thighs in a resealable bag or bowl and pour the marinade over them. Cover and refrigerate for at least 1 hour, preferably 4 hours.
  3. Prepare the slaw: Mix mayonnaise, honey, and lime juice in a bowl. Add shredded cabbage and toss until coated. Refrigerate until ready to serve.
  4. Grill the chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for 5–7 minutes per side, brushing with the marinade during cooking. Cook until the chicken reaches 165°F internally.
  5. Grill the pineapple: Place pineapple slices on the grill and cook for 2–3 minutes per side, until lightly charred.
  6. Toast the buns: Place the buns cut-side down on the grill for about 1–2 minutes, until lightly toasted.
  7. Build the stacks: Spread the honey-lime mayo on the buns. Layer lettuce, grilled chicken, pineapple, red onion, and cabbage slaw.
  8. Finish: Sprinkle with green onions and sesame seeds. Add extra Huli Huli sauce if desired.
  9. Serve: Serve immediately with grilled corn, potato wedges, or a fresh summer salad.

Notes

  • For best flavor, marinate the chicken for at least 4 hours.
  • Feel free to customize the toppings based on your preference.
