- 1½ lb boneless, skinless chicken thighs
- 2 tbsp honey
- 1 tbsp olive oil
- 1–2 tbsp chipotle peppers in adobo sauce, finely chopped
- 1 tbsp adobo sauce
- 2 cloves garlic, minced
- 1 tbsp lime juice
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp chopped fresh cilantro, for garnish
- Lime wedges, for serving
- Pat the chicken thighs dry and season with salt, pepper, smoked paprika, and cumin.
- In a bowl, whisk together the honey, olive oil, chipotle peppers, adobo sauce, garlic, and lime juice.
- Add the chicken and toss until well coated. Let marinate for 20–30 minutes if time allows.
- Heat a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes per side, brushing with the remaining marinade as it cooks.
- Reduce the heat to medium-low and continue cooking until the chicken reaches 165°F internally and the glaze is sticky and caramelized.
- Remove from the heat and let the chicken rest for 5 minutes.
- Garnish with fresh cilantro and serve with lime wedges.

- Serve over rice, alongside roasted vegetables, or tucked into warm tortillas with avocado and a little sour cream.
