A quick and budget-friendly stir fry featuring chicken and cabbage, perfect for a weeknight dinner.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups green cabbage, shredded
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the onion, garlic, and ginger. Sauté for 2-3 minutes until the onion is translucent and fragrant.
  3. Add the shredded cabbage to the skillet and stir-fry for about 5 minutes, or until the cabbage is tender but still slightly crisp.
  4. Return the cooked chicken to the skillet. Pour in the soy sauce, sesame oil, and sugar. Stir well to combine all ingredients and cook for another 2-3 minutes until heated through.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with sliced green onions.

Notes

  • For added crunch, toss in some sliced bell peppers or carrots during the stir-fry.
  • Substitute the chicken with tofu or shrimp for a different protein option.
