Ingredients
Scale
For the Special Burger Sauce
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon finely chopped dill pickles
1 teaspoon pickle juice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
Salt and black pepper, to taste
For the Smash Burgers
2 pounds ground beef, preferably 80% lean and 20% fat
8 slices American cheese or cheddar cheese
4 hamburger buns
2 tablespoons butter, softened
1 tablespoon neutral cooking oil, if needed
Salt and freshly ground black pepper, to taste
Optional Toppings
1 small onion, thinly sliced
1 large tomato, sliced
8 lettuce leaves
8 dill pickle slices
Instructions
Make the Special Sauce: In a small bowl, combine the mayonnaise, ketchup, mustard, chopped pickles, pickle juice, garlic powder, onion powder, and smoked paprika. Stir until smooth, then season with salt and black pepper. Cover and refrigerate while preparing the burgers.
Prepare the Beef: Divide the ground beef into 8 equal portions, about 4 ounces each. Gently roll each portion into a loose ball without packing the meat too tightly. Keep the beef refrigerated until you’re ready to cook.
Toast the Buns: Spread softened butter over the cut sides of the hamburger buns. Heat a large skillet or griddle over medium heat. Place the buns cut-side down and toast for 1–2 minutes, until golden brown. Set aside.
Smash the Patties: Heat a heavy skillet or flat griddle over medium-high to high heat until very hot. Add a little oil if needed. Place a beef ball onto the hot surface and press firmly into a thin patty. Repeat with the remaining beef, cooking in batches.
Cook Until Crispy: Let the patties cook undisturbed for approximately 2–3 minutes, then flip and cook the other side for another 1–2 minutes. Place one slice of cheese on each patty during the final cooking seconds.
Build the Double Cheeseburgers: Spread a layer of special sauce over the bottom half of each toasted bun. Stack two cheesy smash patties on the bun, add toppings if desired, and finish with another spoonful of special sauce.
Notes
Choose the right beef: An 80/20 ground beef blend provides enough fat for juicy patties.
Use a very hot cooking surface for crispy edges.
Smash only once to retain juices.
Don’t overcrowd the skillet to maintain high heat.
Toast the buns to add flavor and prevent sogginess.
